Dishin’ With Debbie-Low Country Boil

It’s one of our favorite crowd-pleasing dishes.  A version of a low country boil that combines shrimp, potatoes, corn, smoked sausage and mouth-watering creole flavors.  It’s perfect for a summer…

It's one of our favorite crowd-pleasing dishes.  A version of a low country boil that combines shrimp, potatoes, corn, smoked sausage and mouth-watering creole flavors.  It's perfect for a summer supper at the beach or even a family dinner at home.  So easy to toss everything into a bubbling pot and spill out onto the table to serve as a casual feast among family and friends.

Here's what you need:

1 pound of shrimp (give or take...I used 12-14  ounces)

1 package smoked sausage (you can also used the spicy variety)

2-3 ears of corn broken into smaller pieces

1 pound baby red potatoes, quartered

4 garlic cloves

2 lemons, quartered

5 Tablespoons creole seasoning

2 teaspoons cayenne pepper

a few good pinches of salt

Directions:

Boil water in a large pot.  Squeeze in the lemon juice and stir in the lemon quarters.  Add the creole seasoning, cayenne, garlic and potatoes.  Throw in some salt.  Boil until potatoes are tender...about 10-12 minutes.  Add the sausage and boil another 3-5 minutes.  Stir in the corn and boil for about a minute.  Add the shrimp and boil for about 3-4 minutes until shrimp is cooked.  Drain the pot.  And, if you like, serve by dumping the contents of the pot onto a paper lined table and gather round with some extra lemons for squeezing on top and some good cocktail sauce for dipping!  Homemade recipe below...

Cocktail sauce

1 cup ketchup

1-2 Tablespoons prepared horseradish

1 Tablespoon lemon juice

1 Tablespoon Worcestershire sauce

1 teaspoon hot sauce

1/4 teaspoon salt

ground pepper
