Dishin’ With Debbie-Turkey Bacon Jalapeno Poppers

The big game is coming up, and let's face it...if our team isn't in it, we care more about the food than the football!  Regardless of which team you're rooting for, everyone will give a thumbs up to these tasty snacks.  It's a healthier take on indulgent poppers.   And, the good news is that nothing is fried!  But, they're still a crowd pleaser.

Ingredients:

4 jalapenos

3-4 T cream cheese spread

4 slices of turkey bacon

Directions:

Preheat oven to 400 degrees.  Slice the peppers in half lengthwise, and scrape out the seeds with a spoon.  Stuff with cheese.  Put the peppers back together, and wrap with a slice of uncooked bacon.  Secure with a toothpick.  Place on foil lined tray that has been sprayed with cooking spray.  Bake for 25-30 minutes.  Mine took 26 minutes.  Then, if you like them crispier, you can broil for a minute.  And I think they would be awesome with a dipping sauce on the side.  If you're not opposed to some extra sugar, I imagine a jezebel sauce to add some sweet to the spice!  I included one I like below.

Note:  Make sure you wash your hands before touching your face or eyes after handling peppers.  And, if you're making these for a party crowd, you'll definitely need to double, triple or quadruple the numbers here!  This is what we call "a good start." LOL

Jezebel Sauce:

18 ounce jar apricot preserves

1 T dijon mustard

2 T prepared horseradish

Whisk ingredients together, and serve on the side for dunking.
