We all have plenty of yummy Girl Scout cookies hanging around this time of year.  How about reinventing them to create new treats that will wow your taste buds?!  Challenge accepted!

Trefoil Cookie Butter

Ingredients:

1 sleeve (about 20 cookies) of Trefoil cookies

2 T light brown sugar

1/2 tsp. vanilla

Dash of cinnamon

3 T vegetable oil

3 T milk

Directions:

Place cookies in food processor, slightly breaking them apart.  Process until fine crumbs.  Add brown sugar, vanilla, and cinnamon.  Mix thoroughly.  Add oil and milk, one tablespoon at a time.  Mix thoroughly in between additions.  Process until the mixture reaches a nut butter type consistency.  Place in a container and store in refrigerator.

1-Minute Thin Mint Mug Cake

Ingredients:

2 heaping T dry chocolate cake mix

2 T Diet Coke (I used Coke Zero Vanilla because that's what I had)

1 Thin Mint cookie

Optional toppings of ice cream and/or fudge sauce

Directions:

Spray oven-safe mug or ramekin with non-stick spray.  Add cake mix and Diet Coke, stirring until combined.  Press a Thin Mint cookie into batter until the edges of cookie are submerged in the batter.  Microwave 60 seconds.  Carefully remove from oven (ramekin will be very hot).  Top with ice cream,  if desired.
