This dish deserves more attention than your typical "salad."  It has so many interesting flavors going on, and it's perfect for a light summer meal!

Ingredients:

Honey Vinaigrette:

2 T honey

1 T mayo

1 T olive oil

1 T apple cider vinegar

1 T balsamic vinegar

pinch of salt

Add all ingredients to a bowl or  shaker and whisk or shake to combine

Candied pecans:

1/2 cup pecans

1 T honey

1/2 t. curry powder

1/4 t. salt

pat of unsalted butter

Add all ingredients to pan over medium high heat.  Toss and stir until honey simmers and thickens coating all pecans.  Watch carefully to avoid burning.  Remove from heat.

Salad:

4 firm peaches

1/2 t. canola oil

fresh spinach

1/2 cup fresh blueberries

goat cheese crumbles

Cut peaches into wedges.  Grill peaches on indoor or outdoor grill 2-3 minutes on each side.  Assemble salad by layering spinach, peaches, pecans, blueberries and goat cheese.  Drizzle with vinaigrette just before serving.
