Our household has been making an effort to shed some pounds this year, and so far, I've lost 55!  I've been trying to choose healthier foods, cutting portions, avoiding mindless snacking and saying "no" to sugary desserts.  Dishes like this keto-inspired treat help drive down our carb intake and drive up the weight loss.  Hope you enjoy!

Ingredients:

1 cup shredded cooked chicken (I used a store-bought rotisserie chicken)

1/4 cup Frank's Red Hot sauce

1 T melted butter

1 cup shredded cheddar cheese

1 cup shredded mozzerella cheese

1/2 cup shredded parmesan cheese

Directions:

Preheat oven to 400.  In a small bowl mix melted butter and hot sauce.  Pour over the chicken and combine thoroughly.  Place chicken mixture in a baking dish and bake for 20 minutes.   Remove from oven and set aside to cool while you make the cheese shells.  In a large bowl, mix the cheeses and drop by 1/3 cup measure onto silpat or parchment lined sheet mounding them up slightly into circles.  They will spread in oven.  I was able to make a total of 6, with 4 fitting comfortably on the sheet without crowding.  Bake for 6-8 minutes until edges start to turn brown and slightly crisp.  Remove and let cool for 1-2 minutes.  With a spatula, flip each disc carefully.  Place a bit of chicken mixture on each shell and roll like a cigar.  Enjoy with ranch or blue cheese, celery and carrots if desired for the "Buffalo Wing" effect.
