This is such a great appetizer for any occasion.  I especially love the flavor of the sweet pears and tangy goat cheese in the fall.  It's just calling for a glass of wine and good friends!

Ingredients:

1 pear, thinly sliced

2 T butter

8 ounces goat cheese

1/2 sweet onion, chopped

1 tsp. sugar

pinch of salt

3 T olive oil

5-10 sprigs of fresh thyme

3-4 T honey

flatbread or naan bread

Directions:

Saute onions in 1 T olive oil with sugar and salt until carmelized.  Melt 2 T butter in pan and add sliced pears.  Saute for 10 minutes, flipping once.  In the meantime, add 3 sprigs of thyme to a bowl with 2 tablespoons of olive oil.  Let infuse for about 5 minutes.  Mix the goat cheese with 2-3 T of honey and leaves stripped from  5 sprigs of thyme.  Pre heat oven to 400.  Brush the thyme infused olive oil on the flatbread and spread the honey goat cheese mixture on.  Sprinkle with onions and pears.  Bake for 8 minutes.  Top with more thyme leaves and a drizzle of honey.
