They tell us it's the most important meal of the day, but many times we are in a hurry and overlook breakfast. Trust me when I tell you that this one is worth taking a few minutes to enjoy on a lazy morning over the weekend.
It's a yummy and indulgent breakfast sandwich made from Mrs. T's Pierogies, bacon, egg, cheese, and some kind of bun for the base. The recipe calls for pretzel buns, which are amazing. However, I couldn't find pretzel buns. I substituted an "Everything Bagel," and it was amazing.
So, you have the soft, chewy bagel, the fluffy scrambled eggs, melted cheese, crispy bacon, the delicious pasta pockets of potato and cheese-filled pierogies, and slightly spicy sriracha mayo. It all adds up to a great way to start your day. If you haven't tried Mrs. T's Pierogies yet, please do! Look for them in the freezer section of your favorite grocery store.
