Being raised in Texas, I really enjoy Tex-Mex flavors.  So, when I found this BBQ Chicken "Nacho" recipe swapping the chips for Mrs. T's Pierogies, I knew I had to try it. And it delivered on all points. I used mini pierogies because I was thinking of chips and bite-sized.  It worked perfectly.  The sweetness of the bbq sauce,  the flavorful and juicy rotisserie chicken, the spicy fresh bite of the red onion, and of course the melted cheese topping were all so delicious!

But, one of the best parts of the dish was the base of Mrs. T's Pierogies, which were amazing with the fluffy cheese and potato filling.  And, don't skip the fresh herbs.  I used a little chopped parsley, but mainly chopped cilantro, to sprinkle as the dish came out of the oven.  I suggest serving right from the sheet tray, family-style. I hope you will try this recipe.  Remember to look for Mrs. T's Pierogies in the freezer section of your favorite grocery store.
