Captain Jim’s Top Five Comfort Foods

As many of you know, I’ve been quarantined at home with Covid this week, so my wife and I have been indulging in comfort foods to make ourselves feel better….

As many of you know, I've been quarantined at home with Covid this week, so my wife and I have been indulging in comfort foods to make ourselves feel better.

Comfort food can mean many things to many people.  For us, our comfort foods are delicious, nostalgic or satisfying dishes that are often associated with happy memories.  We choose these types of foods when we are sick, feeling down, or just need a little pick-me-up.  
Here are the top five comfort foods in my house:
  1. Mac and Cheese:  The classic comfort food.  You can go for the box stuff, but there's nothing like a delicious baked macaroni and cheese.  Here's a good recipe for an extra creamy baked mac and cheese.
  2. Spaghetti and meatballs:  We took the lazy route on this one, using store-bought sauce and pre-fab meatballs, but it was still delicious and filling.
  3. Grilled Cheese Sandwich:  So simple and so satisfying.  Bread, cheese, and a little bit of butter come together for a taste that takes you back to childhood.  Be sure to heat up a can of Campbell's Tomato Soup to go with it!
  4. Pizza:  Pizza can be made in many different ways, but our favorite is making individual pizzas using the six-inch pita breads that you find in the grocery store.  It saves the hassle of rolling out pizza dough, and the pitas are available in whole-grain.  They're also pretty healthy.  We make our own pizza sauce and top with pepperoni, mozzarella, or whatever tickles our fancy.
  5. Meatloaf:  Just like Mom used to make!  Our meatloaf is all-beef and includes lots of finely chopped onion.  Panko bread crumbs, egg and plenty of black pepper round out the flavor.  Yes, we absolutely had mashed potatoes on the side.

Memorial Day weekend and summer are almost here. Let the grilling begin! Of course, for some us, the grilling never stops. That's one of the nice things about our weather in the Carolinas. We can cook our food outdoors practically year-round. The question is, what are your go-to grilling foods?
