Fox News says an 11-year-old Dallas, North Carolina tween is trying to ease the egg shortage by selling eggs from his chickens to local businesses. This North Carolina tween is single handedly easing the egg shortage. Rylen Robbins has 21 chickens that produce 19 eggs a day. He sells them to local businesses like Sweet Anna’s Bakery so they can use them to bake cakes and other goodies.
Courtney Johnson, owner of Sweet Anna’s Bakery in Dallas talked about how the relationship started. Courtney said she watched prices go up for all ingredients she uses in her baking. She knows the Robbins family and has provided cakes and baked goods for their birthday and Christmas parties.
Courtney saw a post from Rylen’s Dad, “He had posted that Rylen Robbins had some eggs, and egg prices just kept going up every week and I just couldn’t do it anymore, so I reached out and said, ‘I will take as many as you can give me.”
Rylen is saving his money and hopes to become a firefighter one day.

No doubt you know about the soaring prices of eggs lately. The spike is attributed to large nationwide outbreaks of avian flu. Subsequently, prices rise, and now eggs might even be harder to find. The Dallas, North Carolina bakery uses about 600 eggs per week making their desserts. Owner Brittany Pressler says they spend nearly $600 a month just on eggs. And, the spike means a rise in their prices on specialty cakes. However, Pressler indicates customers have been understanding. After all, rising prices these days affect everyone.
So, how do we deal with the problem in the meantime? For the short term, many will likely cut down on their typical egg consumption. And, some folks might be lucky enough to have access to their own chickens and fresh eggs. In fact, WSOC reports 10-year-old Rylen Robbins in Dallas has a homemade chicken coop supplying the family eggs. He says one of their best customers is a baker. But, if you don’t have your own chickens, is their another option? Well, for the home baker, these no egg baking substitutions can work in a pinch. And, the swaps might be more plentiful and even a little cheaper. Obviously these won’t be practical for the commercial bakery. Although, for the rest of us it might be worth exploring.
