I have no idea what’s going on right now, but, it seems everyone I know and work with has some form of flu and or Covid. And, it finally hit our house this week. The hubby is down with some wretched illness. And, he requested Chicken Soup. So, I went looking for a semi homemade Chicken Noodle Soup recipe.
What Makes This ‘Semi Homemade’ Chicken Noodle Soup
And although he would be fine with the stuff in a can, I decided to take it to a little higher level. I found a recipe for a Chicken Soup that was a cross between a convenience meal and homemade. I say that because the stock is store bought and the chicken is from a rotisserie chicken. However, after stripping the rotisserie chicken of the usable protein, the bones and skin are plunged into the pot to simmer and give off all the flavor and goodness of a scratch made dish Grandma would be proud to call her own.
There’s something magical about a semi homemade Chicken Noodle Soup for the flu or any other occasion you may use it for. I’m not sure if it’s the salty broth that helps replenish what your body is lacking during an illness or just warm memories of childhood. But, it’s like a heartfelt hug from home with every spoonful. I borrowed the basic technique from dozens of recipes I’ve seen over the years. And, like most good dishes, I added a bit of this and that to make it my own. It’s delicious, affordable and makes a ton. So, you and the family can nosh on it for days.
