We love Girl Scout Cookie season. What's better than having a chance to support your neighborhood kids and enjoy delicious cookies at the same time? I enjoy bumping into them on grocery store sidewalks and exchanging a few dollars for a box of my favorite treats. But, in case you haven't seen any for sale, check their website to learn how to buy them easily!

And, when we lived in a subdivision with a few girl scouts, they'd knock on our door every February with an order form. We were always good for at least 3 boxes if not more! We rarely had any leftover because we devoured them pretty quickly. Plus, they freeze well...or so I've heard! But, if you do want to take Girl Scout Cookies to another level beyond the humble cookie, I offer a couple of ways to transform them into new treats!

So, today we will be using two of the most iconic flavors of Girl Scout Cookies. My favorite is the Trefoil. It's that buttery shortbread flavor they're known for. And, the other, of course, is the Thin Mint. You may be asking yourself, 'what can you possibly do to make these legendary flavors better?' Well, let's take a look. And, it couldn't be easier.

Next, we'll look at transforming Girl Scout Cookies iconic all time favorite Thin Mints. This one is great when you just need a single serving dessert. I'm talking about mug cake! All this needs is a scoop of ice cream and a cup of coffee!
