Dishin’ With Debbie-Sloppy Mac-O-Lantern
It’s my favorite time of year. I love the fall colors, the holidays and cooler weather. I also love all the special recipes I pull out of the pantry. This is a great one to serve for a Halloween party. It’s great comfort food, and the serving vessel is sure to have everyone at your party talking! You can just use your favorite sloppy joe recipe, or even mix up the stuff in the can…no judgement here! But, for what it’s worth, my favorite recipe is below.
Ingredients:
1 pound ground beef or ground turkey
1/4 cup ketchup
1/8 cup Worcestershire sauce
1/8 cup soy sauce
1/4 cup bbq sauce
1 T tomato paste
4-6 orange bell peppers
8 ounces elbow pasta
shredded cheddar cheese
Directions:
Heat oven to 375. Brown ground beef. Add in tomato paste. Add in other ingredients and allow to simmer a few minutes. While simmering, boil water for pasta and cook according to package. Drain pasta and add to meat mixture. Cut tops off peppers and remove seeds. Make sure they sit flat. If not, carefully trim a little off bottoms careful not to cut a hole in them. Then, use a serrated knife to carefully make your faces in the peppers. Stuff them with the beef and pasta mix. Top with cheese. Place on baking sheet with tops on the sheet and bake in 375 degree oven for 20-30 minutes until peppers are tender.
